Kevin Dent said his gamestop contact (whomever that is) said Twisted Metal was selling better than expected so I asked him how UFC 3 was doing. Here is the response:

Target has raised the prices on everything because they want to offset their "deal" that if you use your target card, you get 5% off all purchases. So IF you have a Target card, the price of UFC 3 becomes $59.84 which is more in line with other retailers.
But if you don't have a Target card, look elsewhere for a better deal.
Game changer, no, not yet. If THQ says they sold 1 million copies in the first week, I will change my mind, but I don't think that will happen. I'd love to see 600k - 750k sold in the first week as that would get THQ almost halfway to the 1.5 million goal they set to get to by the end of March. But since pre-numbers were around 250k, according to VGchartz, it may be more near 500k-600k which is still pretty good.
For what its worth, I was in an EB games on release day and I asked the clerk how it was doing. He checked the till numbers and said it had sold 40 units so far that day. Strong for a non midnight release and at that location at least, better than twisted metal. That was at about 6 pm. If all retail venues in NA did 40, that seems like a decent start on things.
