Just found out today that chipotle only buys the dark meat chicken from their farmers who then need to find buyers for the rest of the white meat.
Chipotle I think says the dark meat is more tender and flavorful but I'd prefer the white meat which to me is healthier and just as tasty with a better texture. I've had a few burritos where the chicken is a little rubbery and nasty. If they used white meat or at least did BOTH white and dark as a choice you could choose you poison.
My next burrito won't have chicken in it now that I know it is always all dark meat in there. However...lines still out the door at my two closest chipotle locations so that keeps me long and strong the stock.
& the "beef" that CMG uses is really from water buffalo; the "steak" is really from ox; the "pork" is really from discarded cat pieces from the Chinese restaurant next door...formed, chopped, & shaped, and put together with meat glue...........what a bunch of chumps. Oh! don't drink the lemonade.
The dark meat is type IIa and IIb fast twitch fibers. It's strong muscle that fatigues rapidly. It's higher in fat than type I slow twitch fiber with better endurance. Fast twitch fiber is used for strength. Fast twitch fiber fatigues rapidly but is needed for speed when the chicken runs from the guy with the knife.
