Let's break 596 into thirds and round up to make the math easy at 200 per third.
Now we'll call 11:30-1:00 peak lunch hour and 5:30-7:00 pm peak dinner hour and they need to do a third of their business each of those time periods. 200/(1.5*60) = 2.2 Customers per minute during both the dinner and lunch rush periods. As folks around here have said two customers or orders per minute during peak is just fine and we see it all the time.
Now we have accounted for 3 hours out of the 12 hours they are opened yet we have 200 customers to deal with during non peak times.
12 hours - 3 = 9 hours. 9 hours *60 minutes = 540 total minutes 540 minutes / 200 remaining customers = 1 customer every 2.7 minutes. Again really easy to do from any and all restaruants I have been to and I have been to a lot of them.
