The Reefdiver said a careful look at the skin of the swordfish is helpful, they do have scales though small. Shark, of course, have no scales. I've heard this discussion before...shark IMO is not real good. I'll go along with the General, sea bass.

Plute, you have to realize every place you mentioned is right on the ocean or a coastline. For us landlocked folks, fish is not near as frsh, even if they say they fly it in, it is just not the same.
I've had bad swordfish, it may have been shark.
Legal seafood has the best, and does not swap other cuts.
