One of my favorite programs that appears on BBC America is "Gordon Ramsey Kitchen Nightmares". Gordon is a world renown chef who has transformed thousands of restaurants around the world in addition to owning some of the best restaurants on the planet. If you have EVER watched one of his programs, absolutely without fail, the very first things he does is DRASTICALLY SHRINK THE MENU! Hey guys at the helm of BOBE's restaurant divisions, your menus weigh about a pound! It scares some people, confuses many others and frustrates me every damned time I visit. It also slows down your kitchen, confuses your new hires, increases your inventory and logistics costs, increases waste when inventory goes bad and dramatically increases your administrative costs. YOUR MENU SIZE IS KILLING THE GOLDEN GOOSE YOU IDIOTS! Bring Gordon Ramsey in for a few days, pay him a couple thou, and let him help get your act together. In the economic and competitive environment that exists today, we stockholders can't afford continuing down this path. Bring in Gordon!
Could it be regional? I had lunch at a Mimi's in Ocala, Florida for the first time two days ago and bought BOBE the next morning. The place was packed with a never ending flow of customers. The lunch special was served quickly, was hot, excellent quality and very tastey. Greeted within a minute and seated immediately. Friendly staff was attentive and waitress was exceptional. My one complaint as a customer, but not as a new stockholder, is that I felt rushed.
In the good old days...Bob had a limited menue and a line out the door. So much for improving, you can't be all things to all people! It was also home cooking but the number crunchers won and the volume went down. It's just sad!!!
