7 minute charge? That's been available for years with the A123 cells (now known as B456 Systems). The only problem with them is that the LiFEPO4 chemistry was heavier, so only companies like Fisker were using them. They also don't have thermal runaway. 7 minute charge is simply 6C charge rate. A123 could do that years ago. Including use of their cells a few years ago in Formula One electric motor enhancement components for "boost" acceleration (usable only about once per lap).
The only issue with 7 minute charge is lugging around the 0-gauge electric lines to run that kind of amperage into the vehicle and the industrial strength electrical circuitry on-board to handle it. But 7-minute charges are not magic - just limited by the charging components.
Well I think Elon has said the capability is already in the Model S. Just like going from 40min to 20min. This demo won't be a "the next car will have this" it will be "every model S has this and it will work by X date", or "you just need to add this X module (for free)"and you can do this by X date". He would not demo something in the Model S that is 2-3 years away for the Gen III. That is what auto pilot is for.
