You appear to confuse trading volume with open interest. Trading volume is how many contracts changed hands. If they are all just passing them around, then it doesn't mean anything. A dramatic spike in the open interest shows that there is increased DEMAND for the stock, not just a flurry of trading activity.
The open interest is the totality of contracts that are OPEN to be filled and that is very small in the April $7.50 calls, especially when comparing it to the March $5 strike.
