    For some there are various issues with gluten (wheat in particular). After hearing an audio book, "Wheat Belly" by Dr. William Davis, about 2 1/2 years ago I have been pretty much wheat free since. I had symptoms similar to irritable bowel syndrome, due to wheat. Diabetes and weight issues are increased with wheat in the diet in part due to it's high glycemic index (it's higher than sucrose, refined sugar). There are other problems with wheat -- higher LDL cholesterol, higher triglycerides, brain fog, increased appetite, various autoimmune conditions, etc. A huge problem is that wheat is in so many things -- bread, cookies, cake, pies, crackers, pasta, cereals, etc.
