First, why did he eat the ice cream? Ice cream -- presuming it was real ice cream -- has a high fat content which slows down emptying of the stomach.
Second, both coke and ice cream utilize sucrose (glucose linked to fructose) and/or fructose -- NOT glucose. Fructose is absorbed directly from the intestine and transported to the liver -- ONLY liver cells break down fructose. What happens in the liver is complicated, but the only thing relevant here is that the glycemic index of fructose is about 20 while sucrose is about 70 on a scale where glucose is 100.
Sucrose MUST be digested to be utilized. This involves the enzyme sucrase which is in the lining of the intestine.
The test in the video I downloaded lasted only 15 minutes. Given that the individual ate ice cream before the coke, in all likelihood, not a bit of his intake even reached the intestine, and, therefore, there is no surprise that his glucose didn't change.
A more intelligent test would have been to have chew 5 glucose tablets on an empty stomach every 5 minutes for at least 30 minutes and monitor glucose for an hour afterwards. Glucose absorption begins in the mouth and continues throughout the small intestine. I tried to link to a graph to show what happens, but yahoo, in its infinite stupidity, deletes the post when I do. So you'll have to take my word that even at fifteen minutes you STILL wouldn't see much absorption even of pure glucose.
