At this point, the keto diet has taken over the internet. You've probably read a ton of keto diet success stories and have at least wondered briefly if it's worth trying for yourself. But...wait. You're really effing busy, right? Enter: The Easy Keto For Busy People cookbook—a.k.a. the killer of your "I don't have time for macros and carb counting" excuses.

This recently published cookbook is penned by Jennifer Marie Garza, who dealt with yo-yo dieting throughout her life until she discovered keto. She wanted to share her positive experience (and her love of recipe building) with others, so she even started a blog and a couple of crazy successful Facebook groups where fans flock for her delicious recipes and to cheer each other on. Given her keto journey thus far, a keto cookbook seems like a totally fitting next endeavor.

And, yes, the recipes are time savers *and* delicious. Quick Keto Jalapeño Cheese Bread

Serves 4 | Prep time: 5 minutes | Cook time: 20 minutes

Ingredients:

  • 1 cup shredded part-skim low-moisture mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • 2 large eggs

  • 2 fresh jalapeño peppers, seeded and sliced

Directions:

  1. Preheat the oven to 375° F.

  2. Line a baking sheet with parchment paper or a silicone mat.

  3. Combine the mozzarella, Parmesan, and eggs in a bowl and mix until fully combined. Spoon the mixture onto the prepared baking sheet in 4 portions. Top each with slices of jalapeño.

  4. Bake for 15 to 20 minutes, until the cheese has fully melted and the bread begins to brown.

  5. Let cool for 5 minutes and serve.

Per serving: 156 calories, 9.5 g fat, 5.2 g carbs, 1.3 g fiber, 12.4 g protein
