Like thousands of other people, I commit to living a healthier and happier lifestyle every new year. This isn’t entirely too difficult to do considering I eat a vegan diet, practice yoga religiously, and am quick to “delete” anything or anyone negative from my existence. However, I have struggled with making plant-based meals that don’t require a lot of prep or cooking time. But not any longer!
