The culinary tour de force begins with Chef Matt greeting the guests where he discusses dinner options, reviews their likes and dislikes and explains the flow of the evening. Guests will start with house-made BBQ Chips with a Bleu Cheese Dressing, plus savory, out-the-oven Rosemary and Swiss Cheese Popovers. Likewise, the Palm Beach resort's sommelier, Don DeRocher, will serve a celebratory glass of Champagne and then artfully pair each course with select glasses of wine as the meal progresses. This feast will continue until the guest is satisfied or until the courses are complete. Suggested appetizer courses could be a seasonal treasure of Heirloom Beets with Loxahatchee Goat Cheese, Passion Fruit and Pistachios; Butternut Squash Cappuccino (richly steeped with flavor); Sheep's Milk Ricotta Gnocchi; or Wood Charred Octopus -- it is a crowd favorite at Angle.
Autumnal entree selections could include: Crispy Atlantic Sea Bass, Sauerkraut, Smoked Fingerlings; Broken Arrow Ranch Wild Boar Chops with Pickled Blueberries or one of Matt's imaginative dishes.
